Happy Monday beautiful people! It’s a new week and hopefully we’re all refreshed after the weekend. As I mentioned in my Weekly Workouts post, my parents came to visit this weekend. I didn’t really have anything planned but it ended up being a perfect day! We went to Ikea and I got some sweet new pillow covers for my couch pillows, new cutting boards and some dish towels. Seriously if you live near an Ikea, go get some dish towels, they’re only 79 cents! We went 088to Tom and Chee for lunch which was pretty good but I don’t think it compares to Melt Bar and Grilled back in Cleveland! I had some grocery shopping to get done so I showed my parents Fresh Thyme and my mom loved it!
We also stopped at Graeter’s and I tried their blueberry pie ice cream. It was insanely amazing. If you live near at Graeter’s, do yourself a favor and go get it. Once we were back from the store we decided to play Yahtzee which is increasingly becoming my most favorite game. I’m not really good, (I lost terribly to both my mom and step-dad) but I think it’s tons of fun to play! After dinner, we decided to watch a movie. My parents suggested Would You Rather which actually turned out to be pretty good. It was a little predictable to me but definitely makes you think. Nothing out of the ordinary but a perfect Saturday with family! 🙂
Now on to the tasty stuff. As I mentioned on Instagram last week, salmon was on same so I took advantage and got a ton! I honestly can’t remember the last time I had salmon so needless to say, I was pretty excited. I first experimented with an asian style glaze but ended up liking this one better. I hope you guys like this simple baked salmon as much as I did!
- 1/2 pound salmon
- 2 tsp dill
- 1/2 tsp black pepper
- 1 tsp salt
- 1/4 cup olive oil
- 1 tsp minced garlic
- Juice of 1 lemon or 3 tbsp lemon juice
- Whisk together all ingredients in a shallow dish.
- Place salmon skin side up in dish.
- Cover and let marinade in fridge at least an hour. (NOTE: I found that it turned out better after marinating overnight.)
- Pre-heat oven to 450F.
- Place salmon on foil covered baking sheet and put in oven.
- Bake for 15-18 minutes depending on thickness of salmon.
- Serve with favorite veggies and enjoy!
