Speaking of fall, the weather in Portland has been SO HOT lately and all I want to do is wear jeans and not sweat walking to the bus, is that too much to ask?! We are in the middle of yet another heat wave and I’m conflicted because I want fall flavors and dishes but need to avoid turning on the oven or the stove or really, anything that emits heat. This is exactly why the Pumpkin Pie Smoothie Bowl recipe was created! After a particularly hot and sweaty workout at Core Power Yoga, I came home and was in dire need of 1) protein 2) something cool and 3) something seriously easy to make. When I haven’t planned ahead for my post-workout snack I find myself sometimes ravenous to eat whatever is in sight so a snack that comes together quickly is key! (We have an entire ebook about pre and post-workout meals, and apparently I need to take my own advice and flip through the recipes for inspiration!)
Anyway, this pumpkin pie smoothie bowl takes just a few minutes to make and is easily adaptable depending on what ingredients you have on hand. I teamed up with Wild Friends Foods to try out some of their natural nut butters and am loving the fall-inspired flavors for their Pumpkin Spice Peanut Butter so I decided to feature it here. The Portland-based company was featured on Shark Tank a few years ago and has brought some seriously delicious products to market, so I’m happy to recommend them as I really enjoy the taste and quality of their nut butters.
If you don’t have this particular brand handy, you could sub in your favorite nut butter plus 1-2 tsp of pumpkin pie spice and an extra tablespoon of pumpkin puree.
- 1/2 cup coconut milk
- 1 tbsp Wild Friends Foods Pumpkin Spice Peanut Butter
- 1 frozen banana
- 1 tbsp pumpkin puree
- 2 scoops protein powder
- Optional toppings: shredded coconut, pumpkin pie spice, sliced almonds, chia seeds, chocolate chips
- Place all ingredients (except optional toppings) in a blender. Blend on high for 30 seconds, until smooth.
- Pour smoothie in a bowl. Add desired toppings and enjoy immediately!
- Slice the banana prior to freezing it so it will blend easier.
