You may have noticed that Katie and I have been sharing a LOT of pre- and post-workout meal and snack recipes the last few weeks, and that’s because we are gearing up for the ebook launch this month! We are so excited to share with you 35+ recipes, meal plans, and grocery lists to help you achieve your food and fitness goals. Both of us have busy schedules so it’s super important that we have easy and delicious snacks and meals on hand to fuel our workouts. While I absolutely love having paleo-friendly snacks such as EPIC or RX bars on hand, I think it’s important to switch it up and not rely on those completely for fuel.
I spent several days in Las Vegas last week for a workshop for my Nutritional Therapy Consultant program and while I was busy with long days in class, I was dreaming of sipping on a pina colada by the pool. (Actually, I don’t really even like pina coladas but I DO enjoy a nice daiquiri once in a while!) This Pina Colada Kale Smoothie is definitely the next best thing, because it’s packed with greens and tons of nutrients, plus the delicious fruity flavors of coconut and pineapple! You can’t beat that! So whether you’re soaking up some sun and enjoying this smoothie poolside or gearing up for your next workout, I hope you love it as much as I do.
- ½ avocado
- 3 cups of kale, washed and stems removed
- 1 cup coconut water
- 1 cup pineapple, chopped
- ¼ cup ice
- In a blender, blend all ingredients on high until smooth (1-2 minutes). Enjoy!
- Add protein powder of choice to the smoothie if desired.
