Happy Friday ya hooligans! When you are reading this I’ll be up in Canada, fishing, kayaking and swimming to my heart’s desire! Last year we went around July 4th but decided to go a little earlier this year since Z is getting shoulder surgery next week! I wrote all about our trip here. We will definitely be visiting Henrietta’s again and I’m already thinking of where I want to explore on the kayak. Not to mention being out in the sunshine, playing a bazillion games of Yahtzee and enjoying some adult beverages.
Last year I took a bit of time off from working out when we went to Canada but this time I decided I definitely want to work out while I’m there. I’m participating in the granite games qualifier over the next few weeks and want to make sure I keep improving! I plan on visiting CrossFit Hatchet at least one day to complete the 2nd week of the qualifier but my other plan is to use a lot of what we have surrounding the cabin! As I mentioned, we’re right on the lake so I figured what better a time to do a swimming WOD!? Don’t let my enthusiasm fool you; I’m a pretty terrible swimmer. And if the water is cold I’m going to be a complete baby. Besides swimming, I want to make use of the trails/woods around the area too. There are plenty of trails to hike and run through and I plan on taking advantage. I’m only hoping I don’t get eaten alive by mosquitos this year! Swim 50m out and back
Run to the end of the drive and back
5 push ups
10 jumps (onto picnic table)
15 air squats
15 min AMRAP (as many rounds as possible)
Swim from one dock to the next
Do 5 burpees at every dock
I also decided I’d be bringing some of my own snacks this year. I know we won’t be able to empty out the fridge before we leave so I figured I’d bring some stuff with us, not to mention there are plenty of things I want to have with us for meals. Below is a list of the must haves!
Siete Coconut & Cassava Tortillas– great for breakfast burritos, tacos or quesadillas (if you do cheese 😛 )
My recent box from Graze– full of snacks such as an apple, carrot and almond mix, yummertime punch and punchy protein along with a few other snacks!
Tessemae’s dressing– my current favs are Zesty Ranch and French Vinaigrette!
Another thing I wish I could bring along with me? These coconut cherry popsicles! They are super easy to make and are the perfect treat on a hot day! Fun fact: Growing up I HATED cherries. I refused to eat them, would always pick them out of stuff and was still hesitant to try them post college. However my tune has definitely changed and I am now obsessed. They are great mixed in with smoothies or eaten frozen right out of the fridge. Combine that with the tartness of tart cherry juice and the slight sweetness from coconut milk and you’ve got yourself one tasty treat! Enjoy these coconut cherry popsicles on a hot day or at your next picnic!
- 2 cups frozen cherries
- 1 cup coconut water
- 2 tbsp tart cherry juice
- 2 tbsp maple syrup
- 1 can coconut milk
- Place frozen cherries in blender with coconut milk and blend until smooth.
- Fill popsicle mold half way up with this mixture. Clean our blender or use food processor.
- Place cherry juice, maple syrup and coconut milk into blender and blend until smooth.
- Fill popsicle mold the rest of the way up. Insert handles/top of mold and place in freezer.
- Let popsicles sit overnight so they freeze.
- Once popsicles are set, run under hot water to loosen them up a bit. Pull out and enjoy!
- Don't like cherries? You can easily swap them our for your favorite fruit!
