Happy Monday, all! Notice anything different? Our NEW site is up today and I’m super excited! So to celebrate, let’s have some Chocolate Banana Soft Serve, k? I don’t think I’ll need to twist your arm on this one. It’s dairy free, AIP paleo-friendly, nut free, and void of any sugary garbage that you don’t want to put in your body anyway. It’s five ingredients – banana, coconut milk, cinnamon, carb powder, and ice cubes (which basically don’t count, because ice), and it takes about two minutes to make. It’s perfect for anyone following a Whole 30 or restart program that needs a bit of a treat without the sugar spike. Top this with a dollop of Coconut Whipped Cream if you’re feeling really fancy and just like that, you have yourself a delicious ice cream sundae.
Full disclosure: It’s not super sweet (I’m currently on week two of my AIP paleo journey, meaning I’ve eliminated added sugars while I play around with figuring out which foods do/do not work for me personally), but could easily be sweetened with a bit of maple syrup or coconut sugar if you’re looking for a bit more traditional soft serve taste. Also, if you are not following a strict AIP paleo diet, you can substitute cocoa powder for the carob powder, and it may even have a bit of a more chocolate-y flavor. For me, I love the consistency of the creamy soft serve without worrying about the sugar. Oh and if you’re hard core craving ice cream (and you are OK eating nuts), and this Chocolate Banana Soft Serve doesn’t cut it for you, then check out Katie’s Paleo Ice Cream recipe which is insanely good. Even though it’s the middle of winter and cold here in Portland, my desire for delicious, creamy ice cream has not subsided. I’ve always loved it (even in the dead of winter). As a kid, my parents and I would literally drive through snow storms to get a Dairy Queen Blizzard. Blizzards in blizzards. The irony is too good to ignore. Today I’m perfectly happy swapping my DQ sundae for this homemade treat. I might just go make myself one right now as a matter of fact.

- 1 frozen banana (NOTE: ideally, slice the banana into small pieces before freezing. This will make it easier to blend.)
- 1/2 cup coconut milk
- 1/2 tsp cinnamon
- 1 tsp carob powder
- 2 ice cubes
- Blend all ingredients in a blender on high until smooth (approx 1-2 minutes).
- Top with unsweetened coconut chips, chocolate chips, Coconut Whipped Cream, or your favorite topping. Enjoy!
- Cocoa powder can be substituted for carob powder if you are not following a strict AIP paleo diet.
