So you know how there are national holidays for every single food and thing you could ever think of? (In case you were wondering, today is National Irish Coffee Day and National Opposite Day!) While it is slightly ridiculous, I love that it gives everyone an excuse to celebrate something that is otherwise ordinary. I’d like to think that it’s currently National Buffalo Sauce Week for no other reason than because I want to celebrate this divine sauce! On the blog this week, I’ll share with you two new buffalo-style recipes (today’s Buffalo Chicken Meatballs are the first in the series) and my best tips for spicing up any meal with this bold flavor. These Buffalo Chicken Meatballs are super easy to make and can be enjoyed alongside veggies or with spaghetti squash for a hearty meal. Or, serve them as a game day appetizer with toothpicks, extra buffalo sauce for dipping, and your favorite ranch or bleu cheese dressing.
When I first transitioned to a low-carb lifestyle, I made the giant mistake of not using enough flavor, sauce, and spices in my meals. Broccoli and chicken can only go so far, people! If you really want to stick to your goals (whether it be a Whole30 or a longer term goal such as living low carb), you have got to switch up meals with loads of flavor. One of my best tips for any new or aspiring home chef is to keep at least 2-3 sauces on hand in the fridge at all times. Here are some of my go-to sauces (both homemade and store bought) for an average week:
- Buffalo Sauce
- Dairy Free Kale Pesto
- Against All Grain Enchilada Sauce
- Raos Marinara Sauce
- Coconut Aminos
- Primal Kitchen Mayo
All of these can be added to any combination of veggies and protein to instantly punch up a simple meal. I love adding buffalo sauce to breakfast tacos, lettuce wraps, or on top of slow cooker pork for a spicy, flavorful dish. What’s your go-to sauce for busy weeknight dishes?

- 1/4 cup diced white onion
- 1 lb ground chicken
- 1/4 cup Buffalo Sauce
- 1/4 tsp garlic powder
- Preheat oven to 400F.
- Line a baking sheet with foil.
- Mix together all ingredients in a large bowl.
- Take a handful of the mixture and form a meatball. Repeat 12-15 times, until all meat has been used.
- Place meatballs on the baking sheet (1-2 inches apart). Cook for 18-20 minutes, until the chicken is no longer pink inside.
