Happy Friday y’all! First off, we apologize for the lack of tasty recipes as we wrap up our surprise project! We’ve been boring all of our time and energy into making sure this project is perfect for you guys and we cannot wait to share it! In the meantime, bear with us and stay tuned for some exciting announcements!
On to more important matters, the CrossFit Open has come to a close! I’d like to say I was sad but in all truth, I’m glad it’s over! There were some great workouts this year but I’m very happy to get back to regular training and fully focusing on my next weightlifting meet. It’s in about a week and the nerves are starting to set in!! Lately I feel like my lifting is all over the place and I’ve been frustrated but am hoping it will all come together on the platform.
Now on to the really good stuff, the food! I was inspired for this dish after browsing numerous recipes that I could somehow “paleo-fy”. I love checking out Taste of Home or Pinterest for recipes I can put my own paleo twist on. The sauce is sweet and tangy and adds a perfect pop of flavor to the veggies and turkey. I love using lean ground turkey because it’s so easy to cook! I’m so excited for the spring weather and to start including more fresh veggies into my meals. - 1/2 yellow zucchini, chopped
- 1/2 green zucchini, chopped
- 1/2 small red onion, chopped
- 1/2 red pepper, chopped
- 1/2 yellow pepper, chopped
- 1# lean ground turkey
- 1 tbsp almond butter
- 3 garlic cloves, minced
- 1/3 cup tamari
- 1 tbsp olive oil
- 1 tbsp sesame oil
- 4 green onions
- 1 head of butter lettuce
- For sauce;
- 1/2 cup apple cider vinegar
- 1/4 cup ground sunflower seeds
- 1 tbsp molasses
- 1 tbsp sriracha
- 1/4 tsp garlic powder
- 1/8 tsp pepper
- For sauce;
- Place all ingredients in blender and mix until smooth.
- Heat over medium heat in sauce pan and let simmer until thickened, about 10-15 mins.
- Set aside.
- For the rest;
- Heat up olive oil in large saute pan over medium heat. Once pan is hot, add in vegetables.
- Cook vegetables until soft.
- Add in ground turkey and cook until browned.
- Add in tamari, sauce, almond butter, sesame oil and minced garlic.
- Toss all ingredients to ensure they're coated well.
- Let cook for another 3-5 minutes.
- Take off heat, scoop about 2-4 spoonfuls onto lettuce. Top with green onions and enjoy!
